Gitton Silex Les Belles Dames Sancerre - 2023 (750 ml) West Sonoma Coast Earlier this year I hadProduced from a small 4. 8 hectare vineyard on flint soils (silex). The grapes were hand harvested, followed by pressing in a pneumatic bladder press and cold settling of the juice prior to fermentation. The wine proceed with fermentation spontaneously using native yeasts and is rested for 6 months in a combination of stainless steel tanks and large (600l) French oak barriques.
